Matcha and cacao cake with goji berries

Following on from my last recipe, today I suggest another recipe including matcha (powdered green tea) as its main ingredient.

It also includes other beneficial ingredients (coconut oil, agave nectar, cacao, chia seeds, oats, nuts) whose properties I will discuss in coming posts.

Although you need to prepare this dessert in advance, the actual time in the kitchen is minimum; and the results, spectacular.
A dessert rich in textures, flavours and aesthetics.

Preparation time: 10 min. Cooking time: no time needed. Ready in: 24 hours
Serves 8

Ingredients

For the crust
1 c walnuts, peeled
1/2 c cacao powder
2 tbsp chia seeds
4 tbsp agave nectar
2 tbsp raisins

For the matcha cream
1 c marcona almonds (no skin), soaked in water for 1 hour
2 tbsp coconut oil
250 ml oat buttermilk
125 ml water
4 tbsp agave nectar
1 ripe banana, peeled and sliced
1 1/2 tbsp matcha (powdered green tea)

For the white chocolate sauce
100 g cacao butter
2 tbsp agave nectar
125 ml oat buttercream
1 tbsp coconut oil

To decorate
1/2 cup of goji berries

Preparation method

For the crust
Place all ingredients in a blender and blend until all ingredients are combined to form a homogeneous meal.
Layer the bottom of a spring–form square cake pan with half of this paste, press until a compact the meal forms into a solid crust and refrigerate while preparing the tea cream.

For the matcha cream
Place all ingredients in a jar blender and blend until a smooth cream is obtained.
Pour the matcha cream on top of the cacao and walnuts crust and refrigerate for 24 hours for the ingredients to set.

For the white chocolate sauce
Melt cacao butter and coconut oil a bain–marie an blend thoroughly with the rest of ingredients until a homogeneous white sauce is obtained.
Reserve in the fridge at least for 1 hour before serving.

Once the 24 hours have elapsed, take the cake from the refrigerator and unmold.
Serve one rectangular slice per dish. Decorate with the white chocolate sauce and the goji berries.
